Ingredients:
- 2 cups broccoli florets
- 2 packs of ramen noodles, crushed
- 1/2 cup shredded carrots
- 1/4 cup sliced green onions
- 1/4 cup chopped cilantro
- 1/4 cup chopped peanuts
- For Dressing:
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 clove garlic, minced
- 1 teaspoon grated ginger
- 2 tablespoons water
- Sesame seeds and lime wedges for garnish
Instructions:
Blanch the broccoli florets in boiling water for 2 minutes, then immediately transfer to an ice bath to cool
Drain and set aside
In a large mixing bowl, combine the crushed ramen noodles, shredded carrots, sliced green onions, chopped cilantro, and chopped peanuts
In a separate bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, minced garlic, grated ginger, and water to make the dressing
Pour the peanut dressing over the ramen noodle mixture and toss until everything is well coated
Add the blanched broccoli florets and toss again
Garnish the salad with sesame seeds and lime wedges
Serve immediately and enjoy!
