Ingredients:
- 1 cup shredded coconut
- 1 cup graham cracker crumbs
- 1/2 cup melted butter
- 1 1/2 cups coconut cream
- 1 cup Greek yogurt
- 1/2 cup key lime juice
- 1 tablespoon key lime zest
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- Whipped cream for topping
- Sliced key limes for garnish
Instructions:
Shred coconut, mix graham cracker crumbs, and melt butter in a bowl
Combine well
To make a crust, press the coconut mixture into the bottom of serving glasses
Put the Greek yogurt, key lime juice, key lime zest, powdered sugar, and vanilla extract in a different bowl
Add the coconut cream and whisk until the mixture is smooth
In the serving glasses, put the crust down first, then the key lime mixture
Add more layers until the glasses are full, and then put a layer of the key lime mixture on top to finish
Put the parfaits in the fridge for at least two hours so they can set
To serve, put whipped cream on top of each parfait and decorate with key lime slices
